A Fall Must-Have:
Crusty and Rustic Apple Galette with Vanilla Caramel

Nothing makes the fall season cozier than a crusty and delicious Apple Galette. Flaky crust folded over sweet cinnamon apples will fulfill your house with all the fragrances of the fall season. It’ll definitely be the fancy centerpiece of your table especially served with Vanilla Caramel Sauce and Vanilla Ice cream which are made with natural vanilla.
Ingredients
Crust
1 cup (120 g ) all-purpose flour
1/2 tbsp sugar
1/2 tsp kosher salt
1/2 cup ( 100 g) butter
1/4 cup ice water
1/2 tsp cinnamon
1 egg
1 tbsp milk
1 tbsp almond flakes
1/2 tbsp coarse sugar ( Opțional)
Filling
3 apples
2/3 cup ( 130 g ) brown sugar
2 tbsp cornstarch
1 tsp cinnamon
1 tsp “Vanilla Vida” vanilla extract
1/2 orange’s juice
1/2 tsp kosher salt
Vanilla Caramel
1 cup ( 200 g ) granulated sugar
6 tbsp ( 85 g ) butter
1/2 cup ( 120 g ) heavy cream
1 tsp “Vanilla Vida” bean
1/2 tsp kosher salt

Preheat the oven to 190C degrees.
Dough
- In a medium size bowl, mix together flour, sugar, cinnamon and salt.
- Add the butter and crush with your hands or with a food processor until it is coated and becomes the size of small peas.
- Add the water 1 tbsp at a time and mix until it forms into a dough.
- Shape the dough into a 1 inc disc, wrap and let it rest in the fridge for at least 1 hour.
Felling
- In a bowl, mix apples, sugar, cornstarch, cinnamon, orange juice, vanilla extract and salt.
- Remove the dough from the fridge and place on lightly floured parchment paper.
- Roll the dough out to a 14-15 inch circle.
Layer the apple slices from the middle until you leave 1 inc from the edges. - Fold the edges of the dough up in 2-3 inch sections.
- In a small bowl whisk together the egg and 1 tbsp milk to make egg wash. Brush the edges of the crust with egg wash and sprinkle with almond flakes and coarse sugar.
- Place the galette on a baking sheet and bake for 50-60 minutes until the crust is golden brown. Allow to cool for at least 20 minutes.
Serve with vanilla caramel, a scoop of vanilla ice cream and fresh thyme leaves.
Vanilla Caramel
- Add the sugar into a small saucepan over medium-low heat.
- Cook the sugar, stirring with a heat-proof spatula until it turns into a light amber color.
- Remove the pan from the heat and add in the butter.
- Whisk in the cream.
- Return the pan to the heat and cook for a few more minutes.
- Stir in vanilla bean and salt.
- Turn off the heat and let the sauce cool slightly before using it.
