Love at first sight: Vanilla Pudding
Star Bread

As far as morning fantasies are concerned, nothing beats starting the day with a cup of coffee and soft, fluffy and perfectly sweetened star bread. Well, we’re here to tell you that fantasies can come true. This vanilla pudding star bread offers a symphony of flavors and textures, combining vanilla pudding with a flaky embrace of star shaped dough. It’s a winning combination that is destined to make everybody fall in love at first sight. How do we know? It’s written in the stars!

Vanilla Pudding Star Bread

Ingredients

Dough
3 ½ cup ( 490 g) flour
1 package ( 7g) instant yeast
1/4 cup ( 50g) sugar
½ tsp salt
1 cup ( 240g) milk
¼ cup ( 56g) butter at room temparature
1 egg at room temperature
1 tsp Vanilla Vida vanilla extract
Powdered sugar to dust

Vanilla Pudding
1/3 cup ( 60 g) sugar
2 tablespoons cornstarch
1/8 tsp salt
2 cups ( 400 g) milk
2 egg yolks, slightly beaten
2 tbsp butter, softened
2 tsp Vanilla Vida vanilla powder

Vanilla Pudding Prep
1. In a saucepan, mix sugar, cornstarch and salt.
2. Gradually stir in milk.
3. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
4. Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat.
Stir in butter and vanilla.
5. Pour pudding into a bowl. Cover and refrigerate about 1 hour or until chilled.

Preparation

  1. Heat milk in a sauce pan until it reaches 45-50C degrees.
  2. In a large bowl, combine warm milk, yeast and sugar and stir gently. Let it rest for 5- 10 minutes until yeast is activated.
  3. Add in, egg, butter, vanilla extract, salt and flour. Knead for 10-15 minutes.
  4. Place the dough in a lightly greased bowl and cover with plastic or towel. Let the dough rise in a warm place until doubled in size 1-2 hours. (if home temparature is not warm, you can preheat oven to 50 degrees and turn off the oevn and put the dough inside for the rise).
  5. Lightly flour your hands and press the dough down in the center.
  6. Put the dough on a lightly floured surface and divide into 4 equal pieces.
  7. Shape each piece into a ball and let rest covered for 15 minutes.
  8. Roll one pieace of dough out into a approx.
    25 cm circle and transfer to a baking sheet. Spread vanilla pudding on top.
  9. Roll out the second piece of dough into a
    25 cm circle and stack on top of the first piece of dough. Spread vanilla pudding. Repeat the process leaving the top circle empty.
  10. Place a 5 cm round cutter in to the center of top dough and press gently.
  11. Use a sharp knife to cut the circle into 4 equal sections from the imprint in the center to the edge cutting thorough all layers.
  12. Cut each section into 4 equal strips for a total of 16 strips.
  13. Pick up 2 dough strips and twist them away from each other twice. Pich the ends of the sptrips together firmly. Repeat with the rest of strips. Cover the star shaped dough and let rise about 30 minutes. Preheat the oven to 190C degrees.
  14. Whisk 1 egg with 1 tbsp milk for egg wash.
    Brush the star bread with egg wash.
  15. Bake it for 22-25 minutes.
    Remove from oven and place on a wire rack to cool for 20 minutes. Dust with powdered sugar.
