Meet the Maritozzi

If you haven’t heard of Maritozzi, the delightful Italian pastry dessert that is usually eaten in the morning, then you are certainly in for a treat. The Maritozzo is a baked dough bun filled with an abundance of sweet and delicious cream. The Maritozzo is not only tasty, but it’s also one of the most beautiful pastries in existence. So, without further delay, preheat your oven and get ready to delight your guests!
Ingredients
Step 1:
15 grams of fresh yeast
500 grams of flour
120 grams of sugar
180 mm of milk
2 eggs
1 Vanilla Vida bean
80 grams of soft butter
A pinch of salt
Step 2:
1 egg for brushing
Step 3:
120 mm of sugar for the syrup
120 of water
Step 4:
500 mm sweet cream
1 vanilla pudding
3 spoons of sugar
One half glass of milk
1 Vanilla Vida bean
Step 5:
Powdered sugar
Vanilla seeds for powdering
Preparation
Step 1: dough
1. Blend all the ingredients except for the butter and the salt in the mixer.
2. Gradually add the butter as you mix.
3. Add the salt at the very end and mix until you get a smooth dough. Let the dough sit for about an hour until it leavens. Divide the dough into 12 small balls. Roll the balls into sausage-like shapes and let them rest for another hour.
Step 2: Backing
Brush the dough balls and bake for 25 minutes at 170 degrees C.
Step 3: Sugar syrup
Take the buns out of the oven and gently brush with the syrup. Don’t be afraid to use a lot of syrup.
Step 4: Filling
Whip everything to a stable cream and fill the buns with the cream after they have been completely cooled. Use a pastry bag if needed. You can also take things up a notch by filling the bun with both crème anglaise and the cream you’ve created.
To give your dessert a great “sphere-like” look, smoothen the upper part of the cream at the top of the bun.
Step 5: Serving
Powder the Maritozzi with powdered sugar and vanilla powder.
